While I'm not a vegan, like many meat-eaters I am becoming more and more aware of the food I put in my body. I am finding that when I dine out or cook at home, I often opt for a plant-based option especially if I am looking to have a lighter, healthier meal.
One of absolute favourites is cauliflower steaks. Believe me, if you’ve not tried these you really should. They’re quick, easy and tasty; and best of all, they’re super low in calories. Win win!
Here’s how I prepare mine:
Remove the leaves from the cauliflower but keep the core intact.
Cut from top to bottom into ¾ -inch slices without trying not to break the florets.
Brush with a little olive oil or use a low calorie spray for even less calories and sprinkle with turmeric and coriander seeds. You can use whatever spices you like - from chilli to garam masala - and it's worth experimenting to find a version that works best for you.
Roast the cauliflower steaks in a 190oC fan oven (gas mark 6) for about 15 minutes each side until they are tender and brown on the edges.
And that's it. Simple and delicious ... now that’s my kind of cooking!
